TURKEY ZUCCHINI MEATBALLS

Ingredients:

  • 2.5 pounds ground turkey

  • 1 zucchini shredded (and salted) - let it sit for 5 mins with salt and then squeeze out all the water using a dish towel

  • 1/4 cup gf breadcrumbs

  • 1 tbsp garlic powder

  • 1 tbsp oregano

  • 1 tbsp salt

  • 1/4 diced red onion

  • 1 egg

    Tzatziki

  • 1 cup Greek yogurt

  • 1 clove garlic minced

  • Juice half lemon

  • 1/2 cup diced cucumber

  • Salt to taste

Directions

  1. Preheat oven to 400F

  2. For meatballs - mix turkey, zucchini, breadcrumbs, egg, garlic powder, oregano, salt.

  3. Heat a nonstick or cast iron pan over medium high heat. Add a bit of olive oil.

  4. In batches sear golf ball size meatballs 2 mins a side so they get a nice crust.

  5. Place on a parchment-lined baking tray and bake in the oven for 15 mins.
