GLUTEN-FREE APPLE CAKE TATIN
Ingredients:
1/2 cup sugar
1/4 cup water
1 Granny Smith apple peeled and sliced
1 stick butter
3/4 cup sugar
1/2 cup sour cream
4 eggs room temp
1 tbsp vanilla
1 1/2 cups almond flour (sift)
1 cup oat flour (sift)
2 tsp baking powder
Directions
Preheat oven to 350F
Butter a 9-inch glass pie dish, and arrange apples in a non-overlapping pattern on the base of dish.
In a saucepan combine water and 1/2 cup of sugar over high heat until it turns a light amber colour (about 6-8 mins) - keep an eye and swirl don’t stir. Pour evenly over apples.
In an electric mixer cream butter and 3-4 cup sugar. Lower speed and at eggs one at a time, sour cream, and vanilla.
Combine oat and almond flour and baking powder and slowly add to wet mixture. Pour batter evenly over apples and bake for 50-60 mins. Dust with icing sugar.
