GLUTEN-FREE APPLE CAKE TATIN

Inspired by one of my all time faves @inagarten - I have been making this forever and tweaked to make it GF. It is so freaking good - enjoy guys!!

Ingredients:

  • 1/2 cup sugar

  • 1/4 cup water

  • 1 Granny Smith apple peeled and sliced

  • 1 stick butter

  • 3/4 cup sugar

  • 1/2 cup sour cream

  • 4 eggs room temp

  • 1 tbsp vanilla

  • 1 1/2 cups almond flour (sift)

  • 1 cup oat flour (sift)

  • 2 tsp baking powder

Directions

  1. Preheat oven to 350F

  2. Butter a 9-inch glass pie dish, and arrange apples in a non-overlapping pattern on the base of dish.

  3. In a saucepan combine water and 1/2 cup of sugar over high heat until it turns a light amber colour (about 6-8 mins) - keep an eye and swirl don’t stir. Pour evenly over apples.

  4. In an electric mixer cream butter and 3-4 cup sugar. Lower speed and at eggs one at a time, sour cream, and vanilla.

  5. Combine oat and almond flour and baking powder and slowly add to wet mixture. Pour batter evenly over apples and bake for 50-60 mins. Dust with icing sugar.
