BAKED WALNUT CRUSTED CHICKEN PARM
Ingredients:
6 x chicken breasts (if thick slice in half)
3 cups unsalted walnuts (pulse into breadcrumb texture) - you can also use cashews/ almonds or a mix 1 tbsp oregano
1 tsp paprika
1/4 cup parm
2 tsp salt
1/2 cup egg whites
1 cup marinara sauce
1 cup mozzarella
Basil
Directions
Preheat oven to 425F
In a bowl add pulsed nuts, oregano, paprika, salt, and parm. In another add egg whites.
Place chicken in egg white mixture and then press into nut mixture until both sides are coated. Place on a wire rack on top of a baking tray or on parchment paper (can also spray the top of chicken cutlets) and bake for 20 mins.
Remove from oven and turn to broil. Top cutlets with marinara and mozzarella.
Bake 2-3 mins until cheese is melted. Top with basil.
