ULTIMATE LATKE BOARD

Ingredients:

  • 4 baking potatoes peeled and grated

  • 1 yellow onion grated

  • 2 eggs

  • 1/2 cup breadcrumbs

  • 1 tsp baking soda

  • 2 tsp salt

    Additional ingredients: sour cream, apple sauce, smoked salmon, lemon, dill, caviar, olives, chives

Directions

  1. In a thin dish towel or cheesecloth, squeeze out all the liquid from potatoes and onion. Drain water and combine potato, onion, breadcrumbs, egg, baking soda and salt. Mix until combined.

  2. Heat about 1 cup canola oil in a cast iron skillet or non stick over medium high heat.

  3. Using 1/4 cup form small patties (pressing mixture together with your hands).

  4. Place in hot oil and press patties down with a spatula so they are nice and thin. fry 2-3 mins a side and then flip and cook for an additional 1-2 mins until crispy.

  5. Fry 4 to 5 latkes at a time – not overcrowding the pan.

  6. Drain on a wire rack.

    Assemble your latke board with smoked salmon, sour cream, apple sauce, dill, lemon, caviar, olives, chives.
