TURKEY STUFFED PEPPERS

Ingredients:

  • 5-6 peppers (I used red, yellow and orange)

  • 1 pound lean ground beef (can sub for ground Turkey/ chicken or cooked quinoa)

  • 3 celery ribs diced

  • 2 carrots diced

  • 1 onion diced

  • 2 cloves minced garlic

  • Small head of broccoli chopped

  • Handful spinach

  • 1 tsp dry oregano

  • 1 tsp paprika

  • 1 tsp dry parsley

  • 1 jar tomato sauce

  • 2 tbsp tomato paste

    Directions

  1. Preheat oven to 400F.

  2. In a pan, sautée beef in olive oil over medium-high heat until cooked through.

  3. Remove from pan (and drain liquid). Add a bit of olive oil, sautee all veg for about 5 mins until softened over medium heat. Add beef back in.

  4. Add a handful of spinach and cook until wilted. Add all spices and 1 cup tomato sauce and tomato paste. Season with salt to taste.

  5. Spoon tomato sauce (about 1/2 cup) into the bottom of a Dutch oven pan. Could you stuff peppers with the mixture and place them in the pan?

  6. Spoons but more tomato sauce over peppers, cover and bake for 1 hr.

  7. Remove, add grated parm and bake for 2-3 mins until cheese has melted.
