STEAK TACOS WITH SPICY RED PEPPER SAUCE
Ingredients:
Flank or skirt steak
4 cloves garlic - smashed
2 limes - cut in half
1/4 cup OJ
2 tbsp Apple cider vinegar
1/4 cup Olive Oil
2 tbsp tamari
Handful of cilantro (omit if don’t like it)
1 tsp chilli powder
1 tsp oregano
2 tsp salt
Spicy Red Pepper Sauce1 cup roasted red pepper (I use jarred)
1/2 cup cashews (soak in water for 10 mins)
1 glove of garlic minced
Juice x 1 lime
1/8 tsp paprika
1/4 cup olive oil
1 tbsp maple syrup
Salt and pepper to taste
Directions
Marinade steak in all ingredients for 24 hours.
Remove 30 mins before cooking from fridge and make sure no pieces of garlic or herbs are stuck to it (will burn).
Heat grill pan or bbq to high heat.
Grill 5 mins a side. Remove steak and let rest for 10 mins and then thinly slice against grain (ie opposite direction of lines on steak)
For the red pepper sauce, combine all ingredients in a blender.
CAULIFLOWER TACOS
Cut up one whole cauli into florets. Toss with 3 tbsp olive oil, 1/2 tsp garlic powder, 1 tsp chilli powder, 1 tsp paprika. Bake 400F for 20-30 mins.
