EASY SPAGHETTI & HOMEMADE TOMATO SAUCE
Ingredients:
Spaghetti
2 pints cherry tomatoes (about 2 cups)
2 cloves of garlic (skin on)
A few sprigs of basil
3-4 tbsp olive oil
1 tbsp butter (optional)
Salt and pepper
Directions
Set oven to 450F
In a baking dish (big enough so the cherry tomatoes are in one layer) - add tomatoes, garlic (skin on), basil (keep it whole), olive oil and salt and pepper.
Tuck basil under tomatoes so it doesn’t burn. And roast tomatoes for 25-30 mins.
Remove the dish from the oven, take the skin off of the garlic (wait a minute so you don’t burn yourself!) and put garlic back in with tomatoes. Discard basil.
Using a fork or masher, mash all ingredients until you get a saucy consistency. Add mixture to a pan over medium heat. Add in one tbsp butter, and mix until it has dissolved and the sauce has thickened.
Add in pasta and combine with sauce. Top with parmesan and basil.
