SUMMER POTATO SALAD
Ingredients:
2 pounds of baby potatoes
1/4 cup light mayo or plain yogurt
1 tbsp dijon
2 tbsp olive oil
Juice 1/2 lemon
Half a red pepper diced
Handful of chopped dill
Salt to taste
Handful crumbled up Lays plain chips
Directions
Boil potatoes for 15 mins (until fork tender).
Drain and let cool completely.
Once cooked add in bell pepper.
Mix mayo, dijon, oil, lemon and salt.
Toss with potato and red pepper.
Mix in dill and top with crumbled potato chips.
