HONEY GLAZED SALMON RICE PAPER TACOS
Ingredients:
Sauce:
1/2 cup tamari
1/2 cup honey
2 cloves minced garlic
3 tbsp rice wine vinegar
1 tbsp cornstarch or arrowroot powder mixed with 2 tbsp of water (this will thicken the sauce)
1 pound salmon (skin off and cubed)
Sheets of rice paper (if they are big cut into smaller sizes - will fry better)
Grape seed oil
Toppings: avocado, shredded cabbage, hot peppers, sesame seeds
Directions
Combine all ingredients in a saucepan (except for the cornstarch mixture) over medium-high heat.
Bring to a boil and then add cornstarch/water.
Simmer for 4-5 mins until the sauce has thickened.
In a nonstick with a bit of oil, add your cubed salmon and cook for a few mins.
Add half of the sauce and cook until the salmon has become caramelized. You could honestly stop here - this salmon is so good!!!
Heat grape seed oil over high heat - once oil is hot drop in your rice paper one at a time. They will crisp up immediately.
Place on a paper towel to drain. Great as a gluten-free snack on its own.
