SHRIMP LETTUCE WRAPS W AVO MANGO SALSA

Ingredients:

  • 1.5 pounds cleaned and peeled shrimp
    2 cloves minced garlic
    Juice 1 lime
    2 tbsp olive or grape seed oil
    Zest of lime
    2 tsp salt

    2 x mangoes diced
    1 avo diced
    1/2 red onion diced
    Juice if 1 lime
    2 tbsp oil
    Salt to taste
    Optional - diced hot pepper or jalapeño / cilantro to garnish

    Butter lettuce

Directions

  1. Heat bbq to medium high heat. Toss shrimp in lime juice and zest, garlic and oil (dont marinate for too long or lime will cook shrimp). I like to put them on metal skewers to make flipping easy but it’s not necessary.

  2. Grill 2-3 mins a side

  3. Combine all ingredients for the salsa.

  4. Using butter lettuce, assemble and add shrimp, salsa, a squeeze of lime and some cilantro.
