SHEET PAN ROASTED CHICKEN AND VEG

Ingredients:

  • 8-12 chicken thighs and drums (skin on bone in)

  • 2 sweet potatoes (skin on cut in big pieces)

  • Red onion cut in similar size pieces

  • Brussel sprouts whole

  • 2-3 tbsp olive oil

  • 2-3 tbsp maple syrup

  • 1 tbsp paprika

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 1 tsp cumin

  • 2 tsp coriander

  • 2 tsp zataar

  • 1 tbsp salt

Directions

  1. Preheat oven to 400F. Mix spice blend.

  2. Toss veggies and chicken in olive oil and maple syrup and then coat in spice blend.

  3. Place on parchment lined tray (I used two so the chicken and veg weren’t crowded).

  4. Bake for 1 hr and then broil 3-4 mins.
