CRISPY SMASHED POTATO SALAD
Ingredients:
20-30 baby potatoes
Olive oil
Salt
1/3 cup chopped dill
1/3 cup chopped parsley
1/2 cup diced cucumber
1/4 cup pickled onions (or chopped red onions)
1/4 cup mayo
1/3 cup yogurt
1 tbsp Dijon
1 tbsp apple cider vinegar
1 glove minced garlic
Directions
Preheat over to 450F. Boil potatoes for 10 mins.
Then using a glass smashed very thinly on a baking tray.
Drizzle with olive oil and salt and bake 25-30 mins flipping halfway
While those are baking combine all your ingredients for the sauce.
Remove potatoes from oven, let cook and mix into your sauce.
Optional - crumble dill pickle chips on top.
