CRISPY SMASHED POTATO SALAD

Ingredients:

  • 20-30 baby potatoes

  • Olive oil

  • Salt

  • 1/3 cup chopped dill

  • 1/3 cup chopped parsley

  • 1/2 cup diced cucumber

  • 1/4 cup pickled onions (or chopped red onions)

  • 1/4 cup mayo

  • 1/3 cup yogurt

  • 1 tbsp Dijon

  • 1 tbsp apple cider vinegar

  • 1 glove minced garlic

Directions

  1. Preheat over to 450F. Boil potatoes for 10 mins.

  2. Then using a glass smashed very thinly on a baking tray.

  3. Drizzle with olive oil and salt and bake 25-30 mins flipping halfway

  4. While those are baking combine all your ingredients for the sauce.

  5. Remove potatoes from oven, let cook and mix into your sauce.

  6. Optional - crumble dill pickle chips on top.
