PINK BEET PANCAKES
Ingredients:
3 fresh roasted beets (or canned) - about ½ a cup
1 ½ cups rolled oats
1 tsp baking powder
2 eggs
2 tsp vanilla
1 ripe banana
½ cup almond milk
3 tbsp maple syrup
Directions:
If using fresh beets, cut off stems, peel and cut in half.
Roast at 350F in an oil-sprayed pan covered with foil for 45-60 mins.
Combine all ingredients in a blender (including cooled roasted beets).
Heat pan over medium-low heat - add coconut oil or butter.
When the pan is hot using ¼ measuring cup - pour small-sized pancakes into the pan. Cook for 2-3 mins a side, flip and do the same on the other side.
Top with nut butter, berries, syrup.
