PINK BEET PANCAKES

Ingredients:

  • 3 fresh roasted beets (or canned) - about ½ a cup

  • 1 ½  cups rolled oats

  • 1 tsp baking powder 

  • 2 eggs 

  • 2 tsp vanilla

  • 1 ripe banana

  • ½  cup almond milk

  • 3 tbsp maple syrup 

Directions:

  1. If using fresh beets, cut off stems, peel and cut in half. 

  2. Roast at 350F in an oil-sprayed pan covered with foil for 45-60 mins.

  3. Combine all ingredients in a blender (including cooled roasted beets). 

  4. Heat pan over medium-low heat - add coconut oil or butter.

  5. When the pan is hot using ¼ measuring cup - pour small-sized pancakes into the pan. Cook for 2-3 mins a side, flip and do the same on the other side. 

  6. Top with nut butter, berries, syrup.
