ONE PAN BAKED COD PICATTA

Ingredients:

  • 4-6 skinless cod filets (about 5 Oz each)

  • 1/2 cup gf flour

  • 3-4 tbsp butter

  • 1 cup chicken stock

  • Juice 1 lemon

  • 1 tbsp cornstarch mixed with 2 tbsp water

  • Chopped parsley

Directions

  1. Set oven to broil.

  2. Pat fish dry and season with salt.

  3. Coat on both sides with flour and shake off excess. Heat olive oil over medium high heat in a large non stick pan - once oil is hot pan fry fish on each side for 3-4 minutes.

  4. Remove, add butter scraping bits off the bottom of the pan.

  5. Add chicken stock, lemon juice, cornstarch mixture.

  6. Reduce for a few mins and then add your fish back in, too with lemon and broil for 3-4 mins.

  7. Top with chopped parsley.
    *can sub fish for thin chicken cutlets
