GF CHOCOLATE BROWNIE COOKIES

Ingredients:

Yields 12-14 cookies.

  • 5oz dark chocolate (I used 1.5 bars of Lindt 70% chocolate)

  • 4 tbsp unsalted butter

  • 3/4 cup granulated sugar

  • 2 room temp eggs

  • 1/3 cup cocoa powder

  • Maldon salt

  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350F.

  2. In a heat proof dish melt butter and chocolate in micro (about 1-1.5 mins).

  3. In a mixer with a whisk best sugar and eggs for about 5 minutes until fluffy and pale.

  4. Pour chocolate mixture in and whisk until combined. Add in cocoa powder and stir until combined.

  5. And hand stir chocolate chips.

  6. Chill batter for 5 mins. Use an ice cream scoop to portion cookies on a parchment lined (and sprayed) cookie sheet - leave space they will spread.

  7. Top with a bit of maldon sea salt. Bake Center rack for 8 mins. They will look underdone but will cool and harden slightly.

  8. Keep in an airtight container
