GF CHOCOLATE BROWNIE COOKIES
Ingredients:
Yields 12-14 cookies.
5oz dark chocolate (I used 1.5 bars of Lindt 70% chocolate)
4 tbsp unsalted butter
3/4 cup granulated sugar
2 room temp eggs
1/3 cup cocoa powder
Maldon salt
1 cup chocolate chips
Directions
Preheat oven to 350F.
In a heat proof dish melt butter and chocolate in micro (about 1-1.5 mins).
In a mixer with a whisk best sugar and eggs for about 5 minutes until fluffy and pale.
Pour chocolate mixture in and whisk until combined. Add in cocoa powder and stir until combined.
And hand stir chocolate chips.
Chill batter for 5 mins. Use an ice cream scoop to portion cookies on a parchment lined (and sprayed) cookie sheet - leave space they will spread.
Top with a bit of maldon sea salt. Bake Center rack for 8 mins. They will look underdone but will cool and harden slightly.
