EASY HOMEMADE CHICKEN SOUP

Ingredients:

  • Rotisserie Chicken

  • 2 onions halved skin on

  • 3-4 celery ribs halved

  • 3-4 carrots skin on halved

  • Handful of dill

  • 2 x tbsp peppercorns

Directions

  1. In a Dutch oven - break up a rotisserie chicken, add veg, and fill the pot to the top with water.

  2. Add your dill, and peppercorns and bring to a boil.

  3. Cover and simmer for 30-45 mins.

  4. Remove chicken from pot - remove skin and shred chicken. Drain all veggies from the broth.

  5. Place broth back in pot - I add a cup of diced carrots, you c an add some noodles or matzoh balls and shredded chicken.

  6. Season broth wITH salt to taste.

  7. Simmer for an additional 10-15 minutes until carrots are tender and noodles are cooked.
