EASY HOMEMADE CHICKEN SOUP
Ingredients:
Rotisserie Chicken
2 onions halved skin on
3-4 celery ribs halved
3-4 carrots skin on halved
Handful of dill
2 x tbsp peppercorns
Directions
In a Dutch oven - break up a rotisserie chicken, add veg, and fill the pot to the top with water.
Add your dill, and peppercorns and bring to a boil.
Cover and simmer for 30-45 mins.
Remove chicken from pot - remove skin and shred chicken. Drain all veggies from the broth.
Place broth back in pot - I add a cup of diced carrots, you c an add some noodles or matzoh balls and shredded chicken.
Season broth wITH salt to taste.
Simmer for an additional 10-15 minutes until carrots are tender and noodles are cooked.
