GUSTO 101 CAVELO NERO (KALE SALAD) COPYCAT

Ingredients:

  • 2 x bunches lacinato kale (ribs removed and finely julienned)

  • Handful of toasted pine nuts (dry toast over medium-high heat in a non-stick pan for 2-3 mins)

  • Handful small dried currants (if can’t find could use raisins or grapes halved)

  • Pecorino (freshly finely grated)

Dressing

  • 6 tbsp lemon juice (about 1 lemon)

  • 5 tbsp olive oil

  • 1/4 cup rice wine vinegar

  • Salt

Directions

  1. Combine all vinaigrette ingredients.

  2. Massage into the kale and let sit for 10-15 mins.

  3. Top with pine nuts, currants, and pecorino. Enjoy!
