GUSTO 101 CAVELO NERO (KALE SALAD) COPYCAT
Ingredients:
2 x bunches lacinato kale (ribs removed and finely julienned)
Handful of toasted pine nuts (dry toast over medium-high heat in a non-stick pan for 2-3 mins)
Handful small dried currants (if can’t find could use raisins or grapes halved)
Pecorino (freshly finely grated)
Dressing
6 tbsp lemon juice (about 1 lemon)
5 tbsp olive oil
1/4 cup rice wine vinegar
Salt
Directions
Combine all vinaigrette ingredients.
Massage into the kale and let sit for 10-15 mins.
Top with pine nuts, currants, and pecorino. Enjoy!
