GF PECAN CRESCENT COOKIES

Ingredients:

  • 2 cups almond flour

  • 6 tbsp softened butter

  • 9 tbsp icing sugar (plus extra to roll cookies in)

  • 1 tsp vanilla

  • ¼ tsp salt

  • ⅔ cups finely chopped pecans

Directions:

  1. Preheat oven to 325 F

  2. Mix almond flour, softened butter, icing sugar, vanilla and salt in a bowl until dough forms and it doesn’t feel dry.

  3. Once combined, mix in pecans.

  4. Roll tablespoons of the dough into a small log then shape into a crescent shape.

  5. Arrange 1 inch apart on a baking sheet.

  6. Bake cookies for 20-25 minutes until they turn golden brown.

  7. Remove from oven and let cool completely.

  8. Roll into the icing sugar until coated.
