FATTOUSH SALAD

Ingredients:

  • Chopped romaine 

  • Tomatoes cut in wedges 

  • Sliced cucumber 

  • Sliced radish 

  • Crumbled feta

  • 1 tbsp chopped mint 

  • GF Pita or tortilla 

  • Olive oil 

  • Salt

  • 1 lemon 

  • ½ tsp sumac 

Directions:

Preheat the oven to 425F. 

  1. Slice the pita or tortilla into triangles.

  2. Toss in a tbsp of olive oil and salt.

  3. Spread on a baking tray (not overlapping) and bake for 5-10 mins (if using thick pita may need longer). Should be toasted. Let cool. 

  4. Combine in a bowl - lettuce, tomatoes, cucumber, radish, crumbled feta. Crumble pita chips on top. Top with mint. 

  5. For the dressing - combine the juice of 1 lemon (2 tbsp), 3 tbsp olive oil, and 1/2 tsp sumac. Pour over salad. I squeeze a bit more lemon over to finish!
