NUT CRUSTED BAKED CRISPY CHICKEN

 

Ingredients:

  • 5-6 chicken breasts (sliced thinly in half)

  • 5-6 cups mixed nuts (walnuts/ almonds/pecans)

  • 1 tbsp oregano

  • 1/4 tsp paprika

  • 2 tsp salt

  • 3 egg whites

  • Olive oil

  • Lemon

Directions:

  1. Preheat the oven to 425°F.

  2. Pulse all nuts together until they resemble breadcrumbs. Mix in salt, paprika, and oregano.

  3. Dip the chicken into egg whites then press into breadcrumbs mixture.

  4. Put the crusted chicken on a parchment-lined baking sheet and bake for 15-minutes.

  5. Flip, drizzle with olive oil and bake for another 10-minutes. Top with a squeeze of lemon and kosher salt.
