EASY CHICKEN SOUVLAKI

Ingredients:

  • 4 chicken breasts - cut into cubes

  • 1.5 tbsp dry oregano

  • 1 tsp paprika

  • Juice 1 lemon

  • 2 tbsp red wine vinegar

  • 2 cloves garlic smashed

  • 1/4 cup olive oil

  • Salt

    TZATZIKI

  • 1 cup plain yogurt

  • 1 small cucumber (remove seeds and grated/ water squeezed out)

  • Juice half lemon

  • 1 garlic - v finely minced

  • 2 tbsp chopped fresh dill

  • 2 tbsp olive oil

  • Salt

Directions

  1. Marinate cubes of chicken in oregano, lemon juice, garlic, olive oil, paprika, red wine vinegar and salt for a minute of 3 hours or overnight.

  2. Put chicken onto skewers.

  3. Heat the grill over medium-high heat and spray with oil.

  4. When grill is hot place skewers on - turn every 4-5 mins.

  5. For 15-20 minutes until the outside has nice grill marks and the inside is cooked through.

  6. Combine all ingredients for tzatziki - serve on the side.
