BAKED SHEET PAN CHICKEN PARM

Ingredients:

  • 6 chicken cutlets (3 chicken breasts sliced in half lengthwise)

  • 1 x cup gf flour of choice

  • 2 x eggs beaten

  • 2 x cup gf breadcrumbs

  • 1/2 x cup parm

  • 2 tsp oregano

  • 1 x cup marinara

  • 1 x cup shredded mozzarella

Directions

  1. Preheat oven to 400F.

  2. Make a dredging station for the chicken.

  3. Set up flour on one plate, beat eggs in a bowl.

  4. Mix breadcrumbs, parm, oregano and salt and put on a plate.

  5. Take a piece of chicken and dip it in flour, then egg, then breadcrumb mixture.

  6. Place on an oil-sprayed baking tray and repeat.

  7. Bake 20 mins - remove from oven and top with a few tbsp marinara sauce and shredded mozzarella.

  8. Place under broiler for 2-3 mins until cheese is melted and golden.
