BAKED CHICKEN PARM MEATBALLS
Ingredients:
1 pound ground chicken
1/2 cup parm
1/4 cup breadcrumbs - I use gf
1 tsp dried oregano
1 egg
salt
1/2 cup almond flour or flour of choice
1 jar marinara sauce
1/4 cup shredded mozzarella or bocconcini balls
additional garnishes: parm, basil, chili flakes
Directions
Preheat oven to 350F.
Combine first 6 ingredients.
Form small golf ball size meatballs.
Coat balls in almond flour and shake off any excess.
Pan fry balls over medium high heat in a bit of olive oil just to get a little brown 2-3 mins a side).
Put marinara sauce in baking dish and add meatballs.
Bake 20 mins.
Add mozzarella and bake an additional 3-5 mins until cheese is melted - eat immediately!!!
