BAKED CHICKEN PARM MEATBALLS

Ingredients:

  • 1 pound ground chicken

  • 1/2 cup parm

  • 1/4 cup breadcrumbs - I use gf

  • 1 tsp dried oregano

  • 1 egg

  • salt

  • 1/2 cup almond flour or flour of choice

  • 1 jar marinara sauce

  • 1/4 cup shredded mozzarella or bocconcini balls

  • additional garnishes: parm, basil, chili flakes

Directions

  1. Preheat oven to 350F.

  2. Combine first 6 ingredients.

  3. Form small golf ball size meatballs.

  4. Coat balls in almond flour and shake off any excess.

  5. Pan fry balls over medium high heat in a bit of olive oil just to get a little brown 2-3 mins a side).

  6. Put marinara sauce in baking dish and add meatballs.

  7. Bake 20 mins.

  8. Add mozzarella and bake an additional 3-5 mins until cheese is melted - eat immediately!!!
