GF CHOCOLATE ZUCCHINI MUFFINS

Ingredients:

  • 1 x ripe banana

  • 1 x egg (room temperature)

  • 1 x zucchini (shredded and liquid squeezed out)

  • 1/2 x cup almond butter

  • 1/2 x cup cocoa powder

  • 1 tsp x baking powder

  • 4 tbsp x honey or maple syrup

  • Optional - chocolate chips

Directions:

  1. Set oven to 400F.

  2. Take all ingredients and blend until smooth.

  3. Put into 12 lined muffin tins.

  4. Top with chocolate chips.

  5. Bake 18-20 mins and let cool 10 mins before eating.

  6. Store 3-5 days in the fridge in a container (blender muffins rise in the oven but then will fall a bit once cooled - this is totally normal!!)
