GF CHOCOLATE ZUCCHINI MUFFINS
Ingredients:
1 x ripe banana
1 x egg (room temperature)
1 x zucchini (shredded and liquid squeezed out)
1/2 x cup almond butter
1/2 x cup cocoa powder
1 tsp x baking powder
4 tbsp x honey or maple syrup
Optional - chocolate chips
Directions:
Set oven to 400F.
Take all ingredients and blend until smooth.
Put into 12 lined muffin tins.
Top with chocolate chips.
Bake 18-20 mins and let cool 10 mins before eating.
Store 3-5 days in the fridge in a container (blender muffins rise in the oven but then will fall a bit once cooled - this is totally normal!!)
