VEGGIE QUINOA BAKE

Ingredients:

  • 1 x tbsp olive oil

  • 1 x white small onion

  • 1 x gloves garlic

  • 1/2 tsp oregano

  • 2 zucchinis - cut into bite sized pieces (not too small)

  • 1 cup mushrooms - sliced

  • A couple handfuls of spinach

  • 1 cup raw quinoa

  • 1 jar fave tomato sauce (I like @raoshomemade)

  • 1.5 cups water

  • Parmesan

Directions

  1. Preheat oven to 375F.

  2. Over medium high heat, sautée onions for 4-5 mins until translucent.

  3. Add garlic, oregano, mushrooms and zucchini.

  4. Cook 4-5 minutes. Add in uncooked quinoa and combine - cooking for about 1 min.

  5. Add in tomato sauce, water and bring to a boil. Cover and simmer on low for 25 mins, stirring occasionally.

  6. Remove the lid and stir in the spinach. Will take a few minutes but will cook down and wilt. Season with salt.

  7. Add parmesan and bake for 5 mins in the oven until cheese is melted.

  8. Enjoy hot - also perfect for leftovers the next day.
