SIMPLE STEW BEEF

Ingredients:

  • 2.5 pounds stewing beef

  • 1 cup red wine

  • 6 cups beef or chicken stock

  • 2 tbsp tomato paste

  • 2 tbsp tamari

  • 4 large carrots peeled and cut into bite size pieces

  • 1/2 onion diced

  • 2-3 sprigs of thyme

  • 1 tbsp arrowroot or cornstarch (mixed in a bit of water)

  • 2 cups baby potatoes halved

Directions

  1. Preheat oven to 300F

  2. Heat a Dutch oven over medium high heat with oil. Brown meat 2-3 mins a side (if it sticks to the pan let it cook a bit longer) - do this in batches!

  3. Add wine and get all the bits off the pan, add stock, paste, and tamari.

  4. Add meat back in, onion and carrot and thyme. (You can leave on stop top for 3 hrs or pop in oven for 3 hrs)

  5. I like to roast my potatoes separate (425F for 30 mins) but you can also add them in with your veg at the beginning.

  6. After 2.5 hrs - remove stems from thyme, add in potatoes if separately roasted and arrowroot or cornstarch mixture to thicken sauce).

  7. Pop back in oven with lid on for 30 mins. Serve over rice and enjoy!
