PINK PASTA

Ingredients:

  • 3 large beets peeled

  • Juice 1 lemon

  • 1 cup ricotta

  • 1/2 cup olive oil

  • Salt and pepper to taste

  • Your favourite pasta (I used @pasta_rummo gf)

Directions

  1. Cut beets into quarters and boil for 20 mins (until fork tender) in a large pot.

  2. Remove and add in your pasta and cook according to instructions.

  3. Blend beets, ricotta, olive oil and salt and pepper (you can throw in a garlic clove).

  4. Mix in with your cooked pasta and serve immediately.
