PINK PASTA
Ingredients:
3 large beets peeled
Juice 1 lemon
1 cup ricotta
1/2 cup olive oil
Salt and pepper to taste
Your favourite pasta (I used @pasta_rummo gf)
Directions
Cut beets into quarters and boil for 20 mins (until fork tender) in a large pot.
Remove and add in your pasta and cook according to instructions.
Blend beets, ricotta, olive oil and salt and pepper (you can throw in a garlic clove).
Mix in with your cooked pasta and serve immediately.
