SHRIMP BURGERS WITH SLAW

Ingredients:

  • 26-30 peeled and deveined shrimp (tail removed)

  • 1 tbsp grated ginger 

  • 1/4 cup diced scallions (green and white part)

  • 1 clove minced garlic 

  • Juice and zest from 1/2 lime 

  • 1 tsp sesame oil

  • 1 tsp salt 

    Slaw Ingredients:

  • 2 cups shredded cabbage (green and purple)

  • 1 tbsp tamari

  • 1 tsp sesame oil

  • 1/2 lime juice and zest

  • 1 tbsp rice wine vinegar 

  • 1 tbsp black sesame seeds


    Optional - bun, sriracha mayo, kimchi

Directions:

In a food processor, add shrimp, garlic, ginger, scallions, lime zest and juice, sesame oil and salt.

  1. Pulse until blended - just a few seconds (don’t over blend). 

  2. Refrigerate 15-20 mins.

  3. Heat a grill or pan over medium high heat. 

  4. Form burgers into 4 patties. Cook on one side 4-5 mins, flip and cook an additional 3-4 mins.

  5. Combine all ingredients for slaw.

  6. Make your burger - top with slaw, sriracha mayo, kimchi and enjoy!
