SHRIMP BURGERS WITH SLAW
Ingredients:
26-30 peeled and deveined shrimp (tail removed)
1 tbsp grated ginger
1/4 cup diced scallions (green and white part)
1 clove minced garlic
Juice and zest from 1/2 lime
1 tsp sesame oil
1 tsp salt
Slaw Ingredients:
2 cups shredded cabbage (green and purple)
1 tbsp tamari
1 tsp sesame oil
1/2 lime juice and zest
1 tbsp rice wine vinegar
1 tbsp black sesame seeds
Optional - bun, sriracha mayo, kimchi
Directions:
In a food processor, add shrimp, garlic, ginger, scallions, lime zest and juice, sesame oil and salt.
Pulse until blended - just a few seconds (don’t over blend).
Refrigerate 15-20 mins.
Heat a grill or pan over medium high heat.
Form burgers into 4 patties. Cook on one side 4-5 mins, flip and cook an additional 3-4 mins.
Combine all ingredients for slaw.
Make your burger - top with slaw, sriracha mayo, kimchi and enjoy!
