HEALTHY BEEF & BROCCOLI
Ingredients:
1.5-2 lbs flank steak
3 tbsp cornstarch or arrowroot powder
1/2 cup tamari or soy sauce
1/2 coconut or brown sugar
1/4 cup water
1 clove minced garlic
1 tsp minced ginger
2 cups broccoli (1 head)
Directions:
Blanch the broccoli by cutting it into bite-size pieces and then submerging it into boiling water for 2 minutes. Remove and rinse under ice-cold water.
Over medium-high heat, add a bit of oil (I like grapeseed) to a pan and cook the steak in batches so they don't overcrowd the pan — approx. 2-minutes per side.
While the steak is cooking combine tamari, sugar, water, ginger, and garlic in a saucepan and cook over medium heat until the sugar has dissolved.
To assemble, put the cooked steak back in the pan over medium heat (I cut it up into bite-size pieces first). Add broccoli and the sauce.
To thicken the sauce add a mixture of 2 tsp cornstarch mixed with 1-2 tbsp water and pour into the pan.
Serve over rice or rice noodles and top with sesame seeds.
