HEALTHY BEEF & BROCCOLI 

 

Ingredients:

  • 1.5-2 lbs flank steak 

  • 3 tbsp cornstarch or arrowroot powder 

  • 1/2 cup tamari or soy sauce 

  • 1/2 coconut or brown sugar 

  • 1/4 cup water 

  • 1 clove minced garlic 

  • 1 tsp minced ginger

  • 2 cups broccoli (1 head)

Directions:

Blanch the broccoli by cutting it into bite-size pieces and then submerging it into boiling water for 2 minutes. Remove and rinse under ice-cold water.   

  1. Over medium-high heat, add a bit of oil (I like grapeseed) to a pan and cook the steak in batches so they don't overcrowd the pan — approx. 2-minutes per side.   

  2. While the steak is cooking combine tamari, sugar, water, ginger, and garlic in a saucepan and cook over medium heat until the sugar has dissolved.  

  3. To assemble, put the cooked steak back in the pan over medium heat (I cut it up into bite-size pieces first).  Add broccoli and the sauce. 

  4. To thicken the sauce add a mixture of 2 tsp cornstarch mixed with 1-2 tbsp water and pour into the pan. 

  5. Serve over rice or rice noodles and top with sesame seeds.
