SALMON TACOS
Ingredients:
2 lbs Atlantic salmon - skin off and cubed
1 tbsp paprika
1/2 tbsp coriander
2 cloves minced garlic
1 juice lime and zest
2 tbsp olive oil
2 tbsp maple syrup or honey
Directions
Preheat oven to 400F.
Divide cubed salmon in half if making for your kids too!
Combine all seasoning in a bowl and mix 3/4 of it in the first salmon bowl and 1/4 in the second (you can add a bit more honey to the kid version) - the idea is to give them a bit less spice. Season both with salt.
Bake on foil for 10 mins and then broil for 2-3 mins. Assemble and enjoy!

*purple cabbage leaves make a great low-carb shell option
* use a GF tortilla and dry toast (no oil) in a nonstick on high heat for a few minutes a side
*Coleslaw (I use a premix and add a scoop of mayo, a little vinegar, lemon juice and salt)
*Guac (mash up avo with lemon juice and salt)
*Pickles Onions (I buy!)
