SALMON TACOS

Ingredients:

  • 2 lbs Atlantic salmon - skin off and cubed

  • 1 tbsp paprika

  • 1/2 tbsp coriander

  • 2 cloves minced garlic

  • 1 juice lime and zest

  • 2 tbsp olive oil

  • 2 tbsp maple syrup or honey

Directions

  1. Preheat oven to 400F.

  2. Divide cubed salmon in half if making for your kids too!

  3. Combine all seasoning in a bowl and mix 3/4 of it in the first salmon bowl and 1/4 in the second (you can add a bit more honey to the kid version) - the idea is to give them a bit less spice. Season both with salt.

  4. Bake on foil for 10 mins and then broil for 2-3 mins. Assemble and enjoy!


    Toppings :
    *purple cabbage leaves make a great low-carb shell option
    * use a GF tortilla and dry toast (no oil) in a nonstick on high heat for a few minutes a side
    *Coleslaw (I use a premix and add a scoop of mayo, a little vinegar, lemon juice and salt)
    *Guac (mash up avo with lemon juice and salt)
    *Pickles Onions (I buy!)
    *Jalapeños
