RESTARAUNT STYLE WHOLE GRILLED FISH

Ingredients:

  • 2 x whole white fish (branzino is my favourite) - cleaned and descaled (my fishmonger does this)

  • Thinly sliced lemon

  • Fresh mint

  • Olive oil

  • Salt

Directions

  1. Heat your bbq over high heat

  2. Rinse your fish in cold water and pat dry

  3. Stuff the cavity with lemon and mint (make sure it’s tucked in).

  4. Rub olive oil and salt on both sides

  5. Once the grill is nice and hot (this will also prevent skin from sticking) - place fish in grill and leave for 6 minutes

  6. Flip and cook an additional 6 minutes

  7. Remove fish and drizzle with a bit more olive oil and lemon
