SUMMER RICE ROLL SALAD BOWLS
Ingredients:
Sauce:
Peppers (I like red and yellow)
Cucumber
Mango
Avocado
Carrots
Green onion
Cilantro
Pack of rice noodles (cook according to directions)
Sautéed shrimp or rotisseries chicken shredded
Crushed peanuts
Sriracha
Dressing:
3/4 cup peanut butter
1/4 cup tamari
1 tbsp sesame oil
1/2 lime
2 tbsp rice wine vinegar
2 tbsp honey
1 Clove garlic
1 small knob ginger
1/4 -1/2 cup water to thin out sauce
Directions
Julienne all your veggies (cut into matchsticks)
For dressing - blend all ingredients.
Add water at the end to thin out if too thick.
Set out all the ingredients so everyone can build their own bowls.
