SUMMER RICE ROLL SALAD BOWLS

Ingredients:

Sauce:

  • Peppers (I like red and yellow)

  • Cucumber

  • Mango

  • Avocado

  • Carrots

  • Green onion

  • Cilantro

  • Pack of rice noodles (cook according to directions)

  • Sautéed shrimp or rotisseries chicken shredded

  • Crushed peanuts

  • Sriracha

    Dressing:

  • 3/4 cup peanut butter

  • 1/4 cup tamari

  • 1 tbsp sesame oil

  • 1/2 lime

  • 2 tbsp rice wine vinegar

  • 2 tbsp honey

  • 1 Clove garlic

  • 1 small knob ginger

  • 1/4 -1/2 cup water to thin out sauce

Directions

  1. Julienne all your veggies (cut into matchsticks)

  2. For dressing - blend all ingredients.

  3. Add water at the end to thin out if too thick.

  4. Set out all the ingredients so everyone can build their own bowls.
