Peach, burrata and corn salad

Ingredients:

  • Peaches sliced

  • Corn on the cob (grilled and cut off the cob in big pieces)

  • Cherry tomatoes halved

  • Avocado cubed

  • Burrata

  • Basil

  • Olive oil

  • Vinegar (balsamic or white wine or champagne vinegar)

  • Maldon Salt

Directions

  1. In a salad dish - place peaches, avocado, corn and cherry tomatoes.

  2. Drizzle with a bit of oil and vinegar and salt.

  3. Scatter pieces of torn burrata into the salad and drizzle with a bit more vinegar and oil.

  4. Top with shredded basil.
