ONE POT CHICKEN NOODLE COCONUT CURRY
Ingredients:
3 x chicken breasts cut into strips (and season with salt and pepper)
1 small onion sliced
2 cloves garlic minced
1 tbsp grated ginger
1 red pepper sliced
2 tbsp of red curry paste (use more if you want spicier) - I used about half a small jar and wasn’t spicy
1 x 400ml full fat coconut milk
2-3 cups chicken or veg stock
Half a pack of rice noodles (soften in hot water for 5 mins)
Sliced green onion and basil
Directions
In a deep pan over medium high heat, in batches cook chicken strips 2-3 mins a side (don’t need to cook through).
Remove and add a bit of olive or sesame oil. Lower heat to medium and sauté onion for a few mins.
Add ginger and garlic. Cook about 1 min.
And peppers and cook for an additional 2 mins.
Add curry paste, can of coconut milk, and stock. Stir to combine.
Season with salt and pepper to taste.
Add chicken back in and noodles and cook for 15/20 mins until noodles have softened.
Top with green onions and basil.
