MINESTRONE SOUP
Ingredients:
1-2 tbsp olive oil
1 onion diced
2 cloves garlic minced
2 carrots diced
¼ tsp oregano
2 zucchini diced
1 red pepper diced
Bay leaf
1 small can tomato paste (about 4 tbsp)
5-6 cups veg stock
1 cup small gf pasta
Parmesan rind
1 small can cannellini white beans
Parm and basil to garnish
Directions:
Heat pot over medium heat with 2 tbsp olive oil.
Add in onion, carrot, garlic and oregano.
Cook 3-4 mins. Add in tomato paste, stock, red pepper, zucchini, uncooked pasta, salt and bay leaf and parmesan rind.
Cook for 25-30 mins until the veggies are soft. Add in beans at the end.
Remove from heat (and remove bay leaf and parmesan rind) and top with basil, parmesan
