MINESTRONE SOUP

Ingredients:

  • 1-2 tbsp olive oil

  • 1 onion diced 

  • 2 cloves garlic minced 

  • 2 carrots diced 

  • ¼ tsp oregano 

  • 2 zucchini diced 

  • 1 red pepper diced 

  • Bay leaf 

  • 1 small can tomato paste (about 4 tbsp)

  • 5-6 cups veg stock 

  • 1 cup small gf pasta 

  • Parmesan rind 

  • 1 small can cannellini white beans 

  • Parm and basil to garnish

Directions:

  1. Heat pot over medium heat with 2 tbsp olive oil.

  2. Add in onion, carrot, garlic and oregano. 

  3. Cook 3-4 mins. Add in tomato paste, stock, red pepper, zucchini, uncooked pasta, salt and bay leaf and parmesan rind. 

  4. Cook for 25-30 mins until the veggies are soft. Add in beans at the end. 

  5. Remove from heat (and remove bay leaf and parmesan rind) and top with basil, parmesan
