LEMON RICOTTA PASTA

Ingredients:

  • Linguine or fettuccine

  • 2 tbsp butter

  • Zest from 1 lemon

  • Juice from 1 lemon

  • 1 cup parm

  • 1 cup full fat ricotta (must be full fat!)

  • 1/2-3/4 cup pasta water

Directions:

  1. Cook pasta according to directions.

2. Whip ricotta in Cuisinart with a pinch of salt until smooth.

3. Over medium heat, brown butter (about 3-4 minutes), add in lemon zest, lemon juice and pasta water.

4. Add in pasta and parmesan. Combine and salt to taste.

5. Assembly - smooth ricotta on the bottom of your dish, and place pasta on top.

6. Garnish with a bit more lemon zest and parmesan (and pepper if your kids will eat it).
