MEDITERRANEAN BOWL WITH TAHINI GREEN GODDESS DRESSING

Ingredients:

  • 2 sweet potatoes (skin on!) - diced

  • 1 can chickpeas - drained, rinsed and pat dry

  • 1 head cauli - cut into florets

  • 1 tsp garlic powder, onion powder, cumin

  • 2 tsp paprika and salt

  • 2-3 chicken breasts (I marinade in lemon, garlic and olive oil salt and pepper) / or use store bought chicken

    Dressing

  • 1 packed cup cilantro (sub with flat leaf parsley if you don’t like)

  • 1 Clove garlic

  • 2 tbsp maple syrup

  • 1/4 cup tahini

  • 1/4 cup water

  • Juice 1 lemon

  • Salt to taste

Directions

  1. Preheat oven to 425F.

  2. Place potatoes, cauli and chickpeas on a parchment lined tray and top with olive oil and spices.

  3. Roast for 20-25 mins.

  4. Combine all ingredients for dressing in a blender. Salt to taste.

  5. If making chicken - wipe of garlic after marinating and grill or cook for 5-6 mins a side in a bit of olive oil (I slice thicker chicken breasts in half so they cook faster).

  6. Assemble bowls and enjoy!
