MEDITERRANEAN BOWL WITH TAHINI GREEN GODDESS DRESSING
Ingredients:
2 sweet potatoes (skin on!) - diced
1 can chickpeas - drained, rinsed and pat dry
1 head cauli - cut into florets
1 tsp garlic powder, onion powder, cumin
2 tsp paprika and salt
2-3 chicken breasts (I marinade in lemon, garlic and olive oil salt and pepper) / or use store bought chicken
Dressing1 packed cup cilantro (sub with flat leaf parsley if you don’t like)
1 Clove garlic
2 tbsp maple syrup
1/4 cup tahini
1/4 cup water
Juice 1 lemon
Salt to taste
Directions
Preheat oven to 425F.
Place potatoes, cauli and chickpeas on a parchment lined tray and top with olive oil and spices.
Roast for 20-25 mins.
Combine all ingredients for dressing in a blender. Salt to taste.
If making chicken - wipe of garlic after marinating and grill or cook for 5-6 mins a side in a bit of olive oil (I slice thicker chicken breasts in half so they cook faster).
Assemble bowls and enjoy!
