KALE, SAUSAGE AND WHITE BEAN SOUP

Ingredients:

  • 5-6 sausages (remove meat from casing) - you can use pork, turkey or chicken sausage

  • 1 can white cannellini beans

  • 1 bunch of kale, stalks removed and chopped

  • 1 onion diced

  • 2 cloves garlic minced

  • Parm rind

  • 2-3 sprigs of thyme

  • 6 cups chicken stock

Directions

  1. In a Dutch oven over medium high heat, cook sausage breaking up pieces (about 4-5 mins).

  2. Remove sausage, and any liquid.

  3. Add a bit more oil, turn heat to medium and sauté onions for a few mins, add garlic.

  4. Cook another min, then add beans, sausage back in, chicken stock, parm ribs and thyme.

  5. Bring heat up to medium high.

  6. Once soup is at a boil, return heat to low and simmer for about 10 mins.

  7. Season with salt and pepper to taste. Add in kale.

  8. Once cooked down serve and top with parm.
