KALE, SAUSAGE AND WHITE BEAN SOUP
Ingredients:
5-6 sausages (remove meat from casing) - you can use pork, turkey or chicken sausage
1 can white cannellini beans
1 bunch of kale, stalks removed and chopped
1 onion diced
2 cloves garlic minced
Parm rind
2-3 sprigs of thyme
6 cups chicken stock
Directions
In a Dutch oven over medium high heat, cook sausage breaking up pieces (about 4-5 mins).
Remove sausage, and any liquid.
Add a bit more oil, turn heat to medium and sauté onions for a few mins, add garlic.
Cook another min, then add beans, sausage back in, chicken stock, parm ribs and thyme.
Bring heat up to medium high.
Once soup is at a boil, return heat to low and simmer for about 10 mins.
Season with salt and pepper to taste. Add in kale.
Once cooked down serve and top with parm.
