HEALTHY FILET ‘O FISH
Ingredients:
1.5 x pound cod (skinless / boneless - NOT black cod / or halibut - I like thinner pieces vs thick)
2 x cup buttermilk
2 x cups gf breadcrumbs
1 x tbsp salt
8 x slider buns (I like @scharglutenfree buns or you can also use a circular cookie cutter to cut your favourite bread)
8 slices quality cheddar cheese
Farmhouse mayo
Bread and Butter pickles
Oil for frying
Directions
Preheat oven to 450F.
Cut fish into 4” pieces (or whatever size fits into the buns)
Place them in a bowl with buttermilk for 30 mins to 1 hr.
Combine breadcrumbs and salt on a plate and dredge fish in mixture (press fish in so pieces flatten a bit).
Heat enough oil in pan so it covers the bottom (over medium high heat). Fry fish in batches 3-4 mins a side (don’t overcrowd pan). And place on a paper towel on a plate to drain oil.
Take buns - on one side brush with a bit of butter or olive oil and on the other side put a slice of cheese. Bake 450F for 5 mins until toasted.
Assembly - place fish in buns, top with pickles and mayo - or ketchup.
*to make healthier ... use yogurt instead of mayo and lettuce as the bun!
Serve with French fries!!!
