EASY LENTIL SOUP

Ingredients:

  • 1/2 onion chopped

  • 3 celery ribs diced

  • 3 carrots diced

  • 1 tbsp oregano

  • 2 tsp paprika

  • 2 x cups rinsed lentils (brown, green or red)

  • 1 x 28 ounce can crushed tomatoes

  • 2 x bay leaves

  • 8 cups veg or chicken broth

  • Salt

  • Lemon

    Directions

  1. In a Dutch oven, heat oil over medium heat.

  2. Sauté onion, carrot and celery for 3-4 mins.

  3. Add garlic - cook for about 1 min. Then add rinsed lentils, crushed tomatoes and broth. Add bay leaves bring to a boil and then simmer on low heat covered for 45 mins.

  4. Remove bay leaves and season w salt to taste - serve with a squeeze lemon and enjoy!
