EASY LENTIL SOUP
Ingredients:
1/2 onion chopped
3 celery ribs diced
3 carrots diced
1 tbsp oregano
2 tsp paprika
2 x cups rinsed lentils (brown, green or red)
1 x 28 ounce can crushed tomatoes
2 x bay leaves
8 cups veg or chicken broth
Salt
Lemon
Directions
In a Dutch oven, heat oil over medium heat.
Sauté onion, carrot and celery for 3-4 mins.
Add garlic - cook for about 1 min. Then add rinsed lentils, crushed tomatoes and broth. Add bay leaves bring to a boil and then simmer on low heat covered for 45 mins.
Remove bay leaves and season w salt to taste - serve with a squeeze lemon and enjoy!
