EASY HOMEMADE FALAFEL

Ingredients:

  • 1 cup dried chickpeas (or 15 ounce can chickpeas)

  • 1 cup packed parsley

  • 1/2 cup packed cilantro (sub w mint or dill if don’t like)

  • 3 gloves minced garlic

  • 1/2 cup diced onion

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp salt

  • 2 tbsp flour (I used chickpea but can use gf or oat flour)

  • 1 tsp baking powder
    Optional - add 1 green jalapeño for spice

    Directions

  1. Soak dry chickpeas in water for 10-12 hours then drain and rinse (if using canned rinse and and pat dry).

  2. Combine all ingredients in a food processor and Refrigerate 1 hr.

  3. Preheat oven to 425F.

  4. Using an ice cream scoop balls onto a sprayed cookie sheet. Spray the tops of the falafels with additional cooking spray. Bake 15 mins.

  5. Flip and bake another 10 mins. So yummy drizzled with tahini!

    Serve in pita or on salad.
