EASY ITALIAN MEATBALLS

Ingredients:

  • 2.5 pounds ground veal

  • ½  pound ground pork 

  • 2 eggs 

  • 1 cup grated parm 

  • ½ tbsp ground parsley 

  • 1 tbsp oregano 

  • 2 tsp onion powder

  • 2 tsp garlic powder 

  • 1 tbsp salt 

  • ¼  cup gf breadcrumbs - I use @auroraimporting 

  • 2 jars marinara sauce (about 4 cups)

  • 1-2 cups water 

Directions:

  1. Combine first 10 ingredients (with hands) 

  2. Heat up tomato sauce and 1 cup water in a large pot, when it’s boiling drop golf size meatballs in.

  3. Make sure all meatballs are submerged in sauce, turn heat to low and let simmer for 1 hour. 

  4. Serve over pasta, spaghetti squash or mashed cauliflower.
