EASY CREAMY BROCCOLI SOUP
Ingredients:
3 carrots - diced
3 celery ribs diced
1 small onion diced
2 cloves of garlic minced
1 large head of broccoli (or two small) cut into small florets - use the stem too!
1 potato peeled and diced
1/4 cup almond butter
5-6 cups water
Olive oil
Directions
In a large pot, over medium-high heat - add 2 tbsp olive oil.
Sautée onion, carrot, and celery.
Cook for 4-5 mins and then add potatoes and minced garlic.
Cook a few more mins and add broccoli.
Stir to combine, cook for 1-2 mins and add water.
Bring to a boil, lower the heat, and cover with a lid partially.
Cook on low for about 30 mins until all veg are soft.
Purée in a blender or with a handheld.
Add in 1/4 cup almond butter and season with salt and pepper to taste.
Top soup with roasted broccoli and parm (or cheddar cheese for the kiddies ;)
