DATE CARAMEL TURTLES
Ingredients:
2 cups pecans
12 pitted dates
1/4 cup water
1 tsp vanilla
1 cup dark chocolate chips
Maldon sea salt
Directions
Preheat oven to 375 and toast pecans in a baking tray for 6-8 mins.
While those are baking soak dates in some water to soften and then blend in blender or food processor with a bit of water and vanilla until paste “caramel” forms.
Melt chocolate in microwave safe bowl (about 1 minute).
To assemble form turtles using 3-4 pecans (create a flower like shape - doesn’t have to be perfect!) top with a teaspoonful of caramel and cover with chocolate (again doesn’t have to be perfect - just try to cover all the caramel with choc).Sprinkle with sea salt. Refrigerate and enjoy! Keep in fridge for up to a week.
