CRUNCHY GRANOLA
Ingredients:
4 cups gf rolled oats (large flakes)
½ cup flax meal
1 cup slivered almonds
1 cup walnuts (chopped)
1 cup pecans (chopped)
2 tsp cinnamon
⅓ cup coconut sugar
½ cup honey
¼ cup maple syrup
¼ cup coconut oil
1 tbsp vanilla
Directions
Preheat oven to 350F
Combine oats, flax meal, cinnamon and nuts.
In a saucepan combine coconut sugar, honey, maple syrup, coconut oil and vanilla.
Bring to a boil, take off heat and pour over dry mixture.
Put mixture on sprayed parchment paper on a large baking tray (or two small ones). Press down the mixture so it’s nice and thin and in one big piece. Bake for 10 minutes, rotate and bake another 8-10 mins.
Wait until cooled completely and break off into big chunks. Store in an airtight container for up to 2 weeks.
