Bang Bang Shrimp

Ingredients:

  • 1 pound cleaned small shrimp

  • 1/2 cup mayo (can sub for full-fat Greek yogurt)

  • 1/3 cup sweet chilli sauce

  • 2 tbsp rice wine vinegar

  • 1 tbsp arrowroot powder or cornstarch

    Additional toppings: rice, edamame, green onions, avocado, cucumbers (I mix cuts with a bit of rice wine vinegar), sesame seeds.

    Directions

  1. In a small bowl combine mayo, sweet chilli sauce and rice vinegar and set aside.

  2. Place shrimp in a dish and combine with arrowroot powder.

  3. In a nonstick over medium-high heat - add two tbsp olive or grape seed oil. In batches - pan fry shrimp for 2 mins, flip and cook another 1-2 minutes. Toss immediately in the sauce.

    Assemble bowls - I do rice, then shrimp, edamame, cucs, avo, green onion and sesame seeds and top with a bit of extra sauce and sriracha for more heat!
