Baked salmon w green goddess dressing

Ingredients:

  • 6 x 6oz salmon filets (skin off)

  • Lemon slices

  • Asparagus

  • 1 cup flat leaf parsley

  • 1 cup basil

  • 1/2 cup mint

  • 1 clove garlic

  • Juice half a lemon

  • 1 clove garlic

  • 1/4 cup plain yogurt

  • 1/2-3/4 cup olive oil

  • 2 tbsp water

  • Salt and pep

Directions

  1. Preheat oven to 400F - on a parchment lined baking sheet lay salmon and asparagus.

  2. Drizzle with olive oil, salt and pepper and place a lemon wedge on each pc of fish.

  3. In a food processor - blend mint, basil, parsley, lemon, garlic, olive oil, yogurt.

  4. Add a bit of water to thin out and salt and pepper to taste.

  5. Drizzle over salmon. Keep in an airtight container for up to 5 days.

  6. Use as a marinade, dip or salad dressing.
