SUMMER PESTO PASTA

Ingredients:

  • 1 cup packed basil

  • 1 cup packed spinach

  • 1/2 cup fresh mint

  • Juice and zest of 1 lemon (add more for a more lemony flavour)

  • 1 clove garlic (add an extra if you like it garlicky)

  • 1/4 cup walnuts

  • 1/4 cup pumpkin seeds

  • 1/4 cup grated parm

  • 1 tsp salt

  • 1/2 cup olive oil

  • 2-4 tbsp water if needed to thin out

Directions

  1. Blend all ingredients until combined.

  2. Boil your fave pasta - reserve one cup of the cooking liquid.

  3. Drain pasta, add in pesto, reserved liquid, and toss to combine.

  4. Top with parm and a squeeze of lemon and more zest.
