SUMMER PESTO PASTA
Ingredients:
1 cup packed basil
1 cup packed spinach
1/2 cup fresh mint
Juice and zest of 1 lemon (add more for a more lemony flavour)
1 clove garlic (add an extra if you like it garlicky)
1/4 cup walnuts
1/4 cup pumpkin seeds
1/4 cup grated parm
1 tsp salt
1/2 cup olive oil
2-4 tbsp water if needed to thin out
Directions
Blend all ingredients until combined.
Boil your fave pasta - reserve one cup of the cooking liquid.
Drain pasta, add in pesto, reserved liquid, and toss to combine.
Top with parm and a squeeze of lemon and more zest.
