PERFECTLY GRILLED LAMB CHOPS
Ingredients:
8-10 lamb chops (I usually make 2 per kid - I also like the thinner ones - they cook up faster)
1 tbsp x Dijon
1 Garlic clove (smashed - leave on)
1 tbsp Olive oil
2-3 Sprigs of fresh thyme or rosemary
1/2 tbsp Salt
Directions
Toss all ingredients together and marinade for a few hours or overnight.
Remove from fridge and let the meat sit out 30 mins before cooking - also remove any marinade from meat (garlic skin or herbs stuck to chops - that will burn while cooking).
Heat grill pan over medium-high heat place chops on and cook 3-4 mins a side (depending on thickness).
Serve plain or with Dijon mustard (for adults).
